Ingredients

  • 1 lb bacon (sliced)
  • 8 eggs
  • 4 cups frozen hash browns (thawed)
  • 2 cups pancake batter
  • 4 tablespoons butter
  • Salt and pepper to taste
  • Optional: cheese, toast, vegetables

Instructions

  1. Preheat Blackstone to 400°F for 10 minutes
  2. Section the griddle (bacon left, eggs middle, pancakes right)
  3. Add bacon to left section, spread out
  4. Cook bacon for 5 minutes until crispy, remove
  5. Add hash browns to left section with butter
  6. Cook hash browns 8-10 minutes, stirring occasionally
  7. Create 4 circles on griddle for pancakes
  8. Pour pancake batter into circles
  9. Crack eggs in middle section while pancakes cook
  10. Flip pancakes after 2-3 minutes
  11. Season eggs with salt and pepper
  12. Flip eggs after 3-4 minutes
  13. When everything is done, serve on a large platter

  • Keep hot zone and cool zone separate
  • Use two spatulas to manage different foods
