- oil thermometer
- spider strainer
- paper towels
Ingredients
- oil (vegetable, canola, or peanut)
- food to fry
- salt
Step-by-Step Instructions
- Fill pot with oil to 1/3 capacity
- Heat to 350-375°F (175-190°C) depending on food
- Use thermometer to verify temperature
- Carefully add food to oil (it will bubble)
- Fry until golden brown, 2-5 minutes
- Remove with spider strainer
- Place on paper towels to drain
- Let oil cool before storing
Professional Tips
- Oil must be at correct temperature or food gets greasy
- Never fry wet food - causes dangerous splattering
- Use oil with very high smoke point
- Don't fill pot more than 1/3 with oil (room for bubbling)
- Reuse oil 3-4 times, then discard
