  • oil (vegetable, canola, or peanut)
  • food to fry
  • salt

Step-by-Step Instructions

  1. Fill pot with oil to 1/3 capacity
  2. Heat to 350-375°F (175-190°C) depending on food
  3. Use thermometer to verify temperature
  4. Carefully add food to oil (it will bubble)
  5. Fry until golden brown, 2-5 minutes
  6. Remove with spider strainer
  7. Place on paper towels to drain
  8. Let oil cool before storing

Professional Tips

  • Oil must be at correct temperature or food gets greasy
  • Never fry wet food - causes dangerous splattering
  • Use oil with very high smoke point
  • Don't fill pot more than 1/3 with oil (room for bubbling)
  • Reuse oil 3-4 times, then discard
