- 2 cups zucchini, prepped
- 1 teaspoon smoked paprika
- 1 tablespoon olive oil or sesame oil

Instructions
- Prep the protein: Press 30 min to remove water, cube or slice.
- Season: Toss extra firm tofu with 1 teaspoon smoked paprika, salt, and pepper.

- Heat: Set to 200°F. Add 1 tablespoon oil.
- Cook protein: Add extra firm tofu and cook for 60-120 minutes. Add halfway through curry or stew to absorb flavors
- Add vegetables: Add zucchini and cook until tender-crisp, about 5-8 minutes.
- Season: Adds meaty, smoky depth to plant proteins. Taste and adjust salt and smoked paprika.
- Finish: Add optional soy sauce or lemon juice for brightness. Serve immediately.
